airflow/pressure based on engine RPM are assuming 100% volumetric efficiency. Even if the engine were working at 100% all the time, you aren't going to exceed the airflow that the lines are dictating. I see what you are saying that the engine will move more air with all the breather modifications (cams, valves, porting, etc), but you will NOT exceed the plot lines that are overlayed on the map. If you look at the map, you can see that you dont really reach the max of the compressor even at 100% VE until some 8000RPM, which most of these car's arent doing. I agree with what you are saying, but you are implying that by doing these breather mods, you are making the engine breathe more than the compressor can supply, which is wrong on every level. The changes that these breather mods produce would only be slight position variations to the RPM plot lines overlayed on the compressor map, not exaggerated differences as you suggest.
